A little sweet treat

Here is my favorite vendor in the market... he is the cake man. Here on his motorcycle cart with a flatbed attached he has set up his oven. Right off to the side there is where he mixes up the batter. You can see the basket full of the empty egg shells along with sacks and buckets of other ingredients. He has an industrial strength mixer sitting there also that he uses to mix it all together right there on the spot. Then he puts the batter in some mold trays, pops then in the oven (run by a generator he has brought along with him too) and ...

in minutes he has dozens of these yummy sponge-cake-like little treats. They were kind of like a muffin and more dense. I can't quite describe them exactly because I've never had any thing like them before. But trust me, they were delicious.

I never saw them anywhere else in China not that we went to very many of these neighborhood-type markets but they definately were not available in the grocery store that we got most of Heidi's non-produce foods from.
